Do You Love Century Egg?

(皮蛋 in Chinese) is a kind of tradional Chinese . It has a lot of interesting English names such as , hundred-year egg,Or thousand-year egg, Because foreigner think it should take long time to compelte the process of transforming.
But we call it pine-patterned egg, Do you notice the pine patterns in the white of the egg?

According to the record, was accidentally discovered at YiYang, HuNan (湖南益阳) during Ming Dynasty. A duck lie an egg into some lime, The egg was found by a farmer two months later. People found it’s real yummy, So they started to make this kind of egg specially.

They would put duck eggs in mixture of clay, ash, salt, lime and rice straw, After several months’ transforming processing, the yolk becomes dark green, while the albumen becomes brown transparent jelly with pine patterns.

My favorite cuisine is very simple: cut into small pieces with a filament, then mix them together with green pepper pieces, Add some vinegar, Okay, That’s a famous cuisine named “green pepper ”(青椒皮蛋).

In my home town at , We love to mix the pieces of and the pieces of soft silken Tofu together, Add some soy sauce and sesame oil, That’s my granny’s favorite “ tofu”(皮蛋豆腐).

people love to cook them with rice and meat, That’s a kind of famous porridge named “ and Lean Pork porridge” (皮蛋瘦肉粥), It’s a kind of dim sum served in many restaurants.

Though is definitely delicious, But the report said lead oxide is added to the mixture by some producers in order to increase the curing speed of century eggs before. though we all know that bad for health. Zinc oxide is used as a replacement Now. But the report said we still can’t eat too much because the is a kind of high cholesterol , people who has cardiovascular disease should eat as less as possible.

So if you have chance to try some centry egg, Don’t eat too much. :P

    Century egg is one of my favorites. But I don’t usually eat century egg; only have it like maybe once a few months so the cholesterol part should not be a problem for me. The other way which I like to eat century egg is when it is prepared in porridge as in the 皮蛋瘦肉粥.

    Hi BK, you are the person who can control yourself well, I always eat too much when I meet my favorite food!
    Yeah, 皮蛋瘦肉粥 is great taste, But I never learn how to cook it myself. I should learn more…

    Hi iwalk, today I showed this post to my husband and he told me that in India these eggs are available in star hotel restaurants specially chinese restaurant..he knew this because before our marriage he worked as a manager at a 5 star hotel in Delhi.

    Becuase century eggs are “yin”, ginger is “yang”. :P

    You can find many kinds of food from different countries there. But I still love the native food they called ”本帮菜”.
    Shanghai has many kind of local dim sum too, I favorite is “荠菜馄饨“,”小笼汤包”,“荠菜年糕”,“麻糖锅炸”,“黄泥螺”,“醉蟹”,“醉鸡”,“五香烤麸”……I feel so sorry I don’t know how to translate them into English, And I have no pictures about them.

    I like having Century Egg but sparingly because I’ve read that it is high in cholesterol or fats, don’t exactly remember which one it is.

    The thing with these eggs is their taste is fairly inconsistent from one package to another. Some have this stinging after-taste which I highly do not prefer.
